Replacement Jap carb for 30mm MZ carb-Any suggestions?

Im looking to replace my worn out 250 Trophy Sport 30mm carb with something Japanese/Dellorto, ideally second-hand so a Keihin/Mikuni from something commonly found in breakers, for instance. Id like to keep the performance' so im guessing a 28 or 30mm carb would do the job? There must be plenty of racers who've done it. Any tips welcomed.....

Mikuni VM series seems to be the way forward although there are German suppliers who can supply new carbs - Bings I think they are as good as they get.

Many years ago I fitted a Amal concentric MkII to my supa 5. I had to machine the inlet manifold to fit the rubber conection piece but when set up it worked well. This site still sells them for 85 GBP: http://www.amalcarb.co.uk/

I needed a bunch of jets to set it up; can't remember any sizes now though.
