I think that the MPG figures are a bit optimistic 50ish on a run but less round and about. I would change the gearbox oil, and clean the tank out. I would put a fresh HT lead cap and plug. I would check the timing and the points and change all the individual fuses, check the carb settings, run it and see.
You can end up changing half the bike - I know I have done it and frankly what ain't broke isn't worth fixing. As someone said if the gearbox oil stinks of petrol then you need to do the seals. They are tough, reliable and a lot of fun.
You may find she doesn't like long inclines, the 250s were like that so you may want to lose a tooth on the front sprocket if that is the case. There is a chance that the exhaust will be all coked up, cheap enough and easier just to get another one. But ride it hard, don't pootle too much, they really like to rev and getting em hot keeps them clean.
